The Apartment Therapy blogiverse never ceases to amaze me with the level of stupidity in their "Good Questions" series. Some questions (and answers) are so dumb, I have a hard time believing someone emailed the editors of an incredibly popular website to ask what to do with leftover bread. With all the time I spend dropping my jaw at and emailing my friends "Good Questions" with commentary in all caps (EAT IT, YA DINGBAT!), I could try some of the suggested remedies and recipes to these urgent and idiotic questions. Don't knock it 'til you try it, be the change you want to see in the blogosphere, yadda yadda yadda.
Last week some poor soul wrote in to The Kitchn asking for healthy snack suggestions for a trip to Las Vegas for a friend's "whirlwind wedding." Aside from worrying in advance about staying satisfied between meals in Vegas (you're in Vegas, the only thing you're going to be worrying about is nothing and there are buffets literally everywhere), the wise editor who answered the question suggested roasted chickpeas and individually-packaged peanut butter shots, which sounds like the perfect combination for worrying about constipation and flatulence while in Vegas. I would never pack snacks for Vegas, except maybe a Kind bar or two and a liter of Gatorade, but I do pack snacks for work, so I'll give this one a shot.
Old Bay Roasted Chickpea Snacks (adapted from The Kitchn)
1 15 oz. can garbanzo beans
1 1/2 T. olive oil
1 1/2 t. Old Bay Seasoning
1 t. kosher salt
1 t. lemon zest
Preheat oven to 450 degrees. Drain, rinse and dry the beans and place on a rimmed baking sheet. Roast for ten minutes, shake them up and roast for ten more minutes. Test them with a squeeze -- they should be crispy on the outside and soft on the inside. If they're brown, they're burned. Combine the olive oil, seasoning, salt and zest in a mixing bowl. Add beans and toss to coat. Return the beans to the baking sheet and roast for another four minutes or so. Remove and eat.
Verdict: Good! I used Old Bay Seasoning because it's the shit and I had it on hand. I tripled the salt because they came out a little bland.
