Crowds stress me out and so do people being in my apartment. However, I have friends that I really like and occasionally it is my turn to host them for dinner and an episode of Beverly Hills, 90210 (long story). I've tried making meals that require more than a couple steps when people are over and I end up making an enormous mess while not managing to socialize. The last few times my pals have come over, we've just picked up sandwiches from Ike's. (I recommend the Tom Brady.) Last night the usual folks came over and I believe I may have found a happy medium between kitchen anxiety blow-out and ordering takeout.
Just one note: I actually didn't eat this last night because my stomach was feeling all weird after super stressful day at work. I'm a baby, I know. Everyone else said it was hella good.
Meyer Lemon-Arugula Pasta (adapted from Sassy Radish)
1 lb fresh fettuccine
1 c. grated Parmesan
2 Meyer lemons, zested and juiced
3 c. baby arugula
1/2 c. fresh ricotta
1 bunch asparagus, blanched and chopped into 1-inch pieces
salt and pepper
olive oil
In a large mixing bowl, combine the Parmesan, the zest of the lemons and the arugula. Cook the pasta according to the directions on the package (usually two to three minutes) and reserve one cup of the pasta water. Drain the pasta and add to the mixing bowl. Quickly add the lemon juice and a bit of the pasta water, then the ricotta, and fold everything together. Add the asparagus and keep mixing until all the cheese is melted and everything is coated well. Salt and pepper to taste and serve with a drizzle of olive oil.
