My Granola Recipe

During our visit with family in Santa Fe, we talked about chia seeds and flax seed, because that's what white people do in their leisure time. I shared that I make granola with ground flax seed and coconut oil (inspired by this recipe) and my in-laws asked if the recipe was on the blog. It wasn't, but now it is.

GRANOLA
3 cups oats
1/4 cup ground flax seed
1/2 cup chopped pistachios
1/2 cup chopped dried apricots
1 cup dried unsweetened coconut flakes
1/4 cup almond butter
1/4 cup coconut oil
1/4 cup agave syrup or pure maple syrup
1 1/4 tablespoon cinnamon
1/2 teaspoon salt

Throw all the ingredients in a food processor and pulse until combined. Throw all of it onto a greased baking sheet (I use coconut oil) and bake at 350 degrees for 30-40 minutes. Store in airtight containers or in the refrigerator. Obviously, this is a pretty basic recipe that can accommodate any additions or subtractions, like dried fruits, nuts, grains, etc. Just put whatever the fuck you want in this, I promise it will be tasty.

My favorite way to eat granola is on plain yogurt, but it's pretty tasty with fruit, with almond milk or just eaten directly out of the jar at 3 o'clock in the morning.
